Balsamic Vinegars from Modena, Italy
Our owners, Barbara and Jerry, visited Modena during the grape harvest and while there, noted the short window of time when the grapes should be harvested to lock in the special qualities used to produce the grape must. Trebbiano and Lambrusco grapes are used to obtain this special extract (the must). After harvesting, the must is aged in a set of small casks of special woods including oak, chestnut and cherry until the liquid has acquired the unique dark amber color and the perfect balance of sweet and sour. Both of our Balsamics were hand selected by Barbara and Jerry while in Modena and each partner perfectly with our Oils of Paicines Extra Virign Olive Oil.
